Bonjour my friends,
This week’s recipe will be another “easy-to-make” one. I was trying find a recipe that would be easy and fast to make for parents.
Last weekend, we (my husband and I) were babysitting for one of our friends. I’ve done my share of babysitting over the years so I’m sadly no stranger to diaper changing, but it was the first time my husband and I would babysit together. We ended up having a great time. We took the kiddos (little 3 years old “J” and baby girl “A”) to the French bakery. Fact: kids, no matter the nationality, LOVE pain au chocolat! That kid devoured that pain au chocolat like there was no tomorrow. He liked to show me every time he found chocolate (which was at every bite) as if it was a new discovery each time! Kids are cute.
We spend a lot of time at the park, climbing rocks, running after rabbits, picking up leafs and shredding them into pieces ( I can confirm that a 15 months old can happily do that for 2 hours straight). Little “J” also learned a valuable lesson from my husband that day: “Stick your tummy out when peeing in the bushes.” Only one pair of shorts suffered through the lesson. The kid spent the day peeing in the bushes instead of the bathroom! His mother probably hates us by now… 🙂
Anyway, it was a fun day, but also a good reminder on how things get busy once kids are involved. So I just wanted to post a recipe for all of you parents out there, that don’t have that much time to spend in the kitchen while taking care of the children.
As you may have already noticed, I love mozzarella. It’s one of my favorite things to eat it in the summer. So for this week’s recipe, I give you: the Caprese Tartine! Very easy to do, but still delicious!

For 2 people:
- 1/3 of a baguette
- 1 or 2 fresh mozzarella balls, diced
- 1 tomato, diced
- Pesto (Olive based)
- Olive Oil
- Salt and Pepper
Preheat oven at 350.
Slice baguette in half. Spread some pesto (be generous).
In a bowl, mix sliced tomato, sliced mozzarella, olive oil, salt and pepper. Add mix on top of baguette.
Put in oven for 15 min or until mozzarella starts to melt.
Serve with a salad or some veggies.
