This week’s recipe is a perfect week night dinner. Quick to fix up, delicious and will satisfy anybody’s appetite after a long day at work. The idea is pretty simple: make a pizza using pita bread.
I started making this recipe a year ago. It was one of those nights that I wanted a home cooked meal, but didn’t feel like cooking it! (I know, a bit contradictory). Anyway, I just added a bunch of ingredients on top of pita bread, stick it in the oven for 15 minutes, and voila! The fun part about this recipe is that the possibilities are almost endless. You can experiment with different ingredients, customize the pita pizza for each person for a dinner party, or even have a “Pita Pizza Heaven Party” where you provide different ingredients, and people make their own pita pizza. It is also a great recipe if you want to have a cooking activity with your children.
I’ve tried several combinations on my pita pizzas and so far, the following recipe is my favorite.

For 2 persons:
- 2 pita bread
- Crème fraiche
- Half of a small onion (cut into very thin pieces)
- 2 thin slices of ham (I like to use black forest ham, cut in small square pieces)
- 1 cup of crumble goat cheese
- 1/2 cup of Gruyère
- Half a spoon of rosemary
- Salt & pepper
Preheat over at 350F.
Put ingredients on pita bread in the order shown above.
Cook in oven for 15 min. Broil for 2 min at the end (careful not to burn it).
Serve with a salad.
