Bonjour my friends,
I was wondering what to cook for this week’s recipe and I remembered I had some pie crust left over from my fabulous Apple Pie (see last’s week post). By the way, when making pie crust, you can always make some extra and freeze it; it’s always good to have some on hand if you’re craving a pie or a Quiche!
Since I already made a Quiche not long ago (recipe to come), I wanted to go a little healthier and make a vegetarian dish: a leek pie. Leeks are full of vitamins and soft fibers. They are low on calories and very good for regulating digestive systems (that is always helpful). For this recipe, I only use the white part of the leeks (and since I hate throwing food away, I keep the green part to make a vegetable soup).
Just like many of my recipes, this is an easy recipe, perfect for week night dinners. It is absolutely delicious (my husband and I ate half of the pie in one evening!) and guild free since it is so healthy!

Leek Pie:
- Crust (same as my Apple Pie – French Style recipe)
Ingredients:
- 2 onions
- 3 leeks (white part)
- 2 tbsp. of minced garlic
- 2 eggs
- ½ cup of half and half
- ½ cup of shredded mozzarella cheese
- 1 tbsp. of grounded nutmeg
- Salt and Pepper
- 3 tbsp. of butter
Preheat oven at 400°F.
Spread butter in a pie pan. Add a little flour so that the crust does not stick. Using a little flour and a rolling-pin, roll dough until it forms a thin pie crust. Place in the pie pan.
In a non-stick pan, melt butter.
Chop onions. Add onions and garlic into pan (medium heat).
Cut leeks into thin pieces. Add to pan.
Cook for 15 min. Onions and leeks should “sweat.” Add salt and pepper.
In the meantime, mix eggs and half and half in a bowl.
In pie pan, place half of the mozzarella cheese evenly. Transfer onion and leek mixture into pie pan. Add egg mixture. Add remaining mozzarella cheese on top.
Place in the oven for 25 min.
